The Classic Breakfast Taco

Bacon and egg in a tortilla is about as American Breakfast as it gets, and in Texas it belongs to the breakfast taco more than it does to any plate. Our bacon is thick-cut, griddled crisp (not chewy), and chopped into bite-sized pieces before going into the taco. The eggs are scrambled soft — never rubbery, never dry.
