Bill Miller Breakfast
Sausage or bacon with scrambled eggs, hash browns, beans and two tortillas.
The complete Bill Miller breakfast menu — the signature $7.15 Bill Miller Breakfast plate, the $4.95 Cowboy Breakfast, homemade griddle cakes, biscuits & gravy, and fifteen breakfast tacos served all day long. Every price updated for 2026, every item linked to its full details.
The Bill Miller breakfast menu is arguably the most important category on the board — it's what turned Bill Miller Bar-B-Q from a 1953 fried-chicken stand into one of Texas's largest breakfast destinations. Two distinct groups live on this page: hot breakfast plates (served until 10:30 AM) and breakfast tacos (served all day from 6 AM to 10 PM).
Hot-plate highlights include the Bill Miller Breakfast at $7.15 (sausage or bacon + eggs + hash browns + beans + 2 tortillas), the budget-hero Cowboy Breakfast at $4.95 (biscuit, gravy, 3 bacon), the Breakfast Bowl at $7.15 (the tortilla-free version), homemade Griddle Cakes at $4.70, the Breakfast Sandwich at $4.80, and the biscuit & gravy at $2.50.
On the taco side of the menu, you'll find classics like Bean & Cheese ($1.60), Bacon & Egg ($2.30), Sausage & Egg ($3.35), and the pit-meat options Brisket ($2.85) and Carne Guisada ($2.85) — plus the legendary Taco Box for $24.00.
Add cheese to any taco for $0.50. Hand-rolled in warm flour tortillas from our bakery.
Pick your breakfast based on how hungry you are, how much time you have, and what you're in the mood for. Here's the decision guide.
| Hunger Level | Recommended Order | Price | Why |
|---|---|---|---|
| Snack-size | 1 × Bean & Cheese Taco | $1.60 | Fastest handheld, zero friction |
| Light | Biscuit & Gravy | $2.50 | Warm, filling, under $3 |
| Standard | Cowboy Breakfast | $4.95 | Best value complete plate |
| Hungry | Bill Miller Breakfast | $7.15 | Signature full plate |
| Very Hungry | Breakfast Bowl + Brisket Taco | $10.00 | Protein-heavy, tortilla-optional |
| Feeding 4–6 | Taco Box | $24.00 | $2/taco, one phone call |
Every breakfast item on the menu ranked cheapest to most expensive. Tacos dominate the bottom end (under $2), full plates cluster around $5–$7.15, and the Taco Box sits alone at $24 for 12 tacos.

After seven decades of serving Texas breakfast, patterns have emerged. Here's the playbook from longtime regulars.
Cowboy Breakfast ($4.95) + coffee ($2.40 or $1.60 refill) = under $7 and out the door in three minutes. This is the morning-commute move. Not enough? Add a bean & cheese taco for $1.60.
Bill Miller Breakfast ($7.15) + large coffee + refill. Signature plate, signature experience, signature value. Some regulars add both sausage and bacon for a small upcharge — worth asking.
Taco Box ($24.00) every single time. Twelve tacos, feeds 4–6 adults comfortably. Save $2.85 over ordering a la carte. If feeding more than six, order two boxes — total $48, feeds 8–10. See the full Taco Box guide for choice-filling strategy.
Order a Carne Guisada taco ($2.85) plus a Bean & Cheese ($1.60) plus a cup of coffee. That's the most "actually Texan" breakfast order on our menu — stewed-beef gravy, refried beans, warm flour tortillas from the in-house bakery.
Bean & Cheese + Potato & Egg is a $3.80 vegetarian breakfast. Add a Biscuit & Gravy for $2.50 to round it out. Note: pinto beans may be cooked with pork fat at some locations — ask.
Breakfast Bowl ($7.15) is the only no-tortilla hot-plate option. Sausage/bacon + eggs + beans (tell them to skip hash browns for lower carbs).
